Gluten-Free Italian Sub, My Favorite Travel Sandwich
What is the best sandwich for travel? My first choice is always my gluten-free Italian sub. It is delicious, easy to make and it holds up well for long travel days.
Gluten-Free Italian Sub, my favorite travel sandwich.
1 gluten-free baguette
2 leaves of Lettuce
2 TBS Banana Peppers
2 TBS Red onion (optional)
1 TBS Mayonnaise (I used vegan)
1/2 TBS Red wine vinegar
1 Olive oil
Mustard
Seasonings -Italian blend or mix of basil, garlic, salt, oregano
Lunch meat of your choice: I like salami, turkey and ham
Cheese or vegan cheese - I used provolone
1 Baguette sliced lengthwise- I used one from a local gluten-free bakery @glutenfreedombakingco but I recommend the baguette from @scharglutenfree for this. I bake any gluten-free baguette before I use it. If the baguette is dry, sprinkle it with water before baking. You just want to warm it slightly and refresh the bread so it has a nice texture and crunch.
Mix mayonnaise (I used vegan mayo), red wine vinegar, Italian seasonings and garlic powder in a bowl. I use a ratio of 2 to 1 for the mayo & oil to vinegar. If I used 1 tablespoons of mayonnaise and 1 tablespoon of olive oil, I would use 1 tablespoon of vinegar. This is really to taste and depends on how much dressing you want.
Chop lettuce, peperoccini or banana peppers, and red onion (optional). For travel, I leave out the onion.
Slice the baguette open lengthwise and spread a small amount of dressing on the bread.
Mix the veggies with the remaining dressing. You may have to make more dressing.
You can chop the lunch meat with the veggies or place your favorite lunch meat and cheese on the bread and top with the vegetable mixture. I used turkey and salami and provolone, but you can use whatever meats and cheeses you prefer. For vegan options use vegan cheese.
Cut the sandwich in half and wrap each half tightly in parchment paper. Place each half in a ziplock baggie. Always include a napkin or paper towel for when you eat it.
