I was diagnosed with Celiac Disease in 2017, I found that eating a strict gluten-free diet was very challenging due to many instances where food in restaurants contained gluten, even though it should have been gluten-free. As a consultant, I was my job requires frequent travel, so I have spent years perfecting how to travel well with celiac disease. I am an expert in navigating things like business meetings and trade shows without starving or relying on protein bars and jerky.
