I used to travel weekly for business, and when I was diagnosed with Celiac Disease that requirement of my job led to so much stress. At the time of diagnosis, I was also on a strict elimination diet to rule out other food allergies, so my list of food restrictions went beyond just gluten. Eating safely at home was hard enough, adding travel felt impossible.
I searched the internet to find information on how to travel safely with celiac disease. I found everything from quick tips for gluten-free snacks to packing an entire kitchen. Some tips worked for what I needed and others were not good.
Through years of travel for business and pleasure, I came up with a system of what works for me without starving or bringing a full kitchen. I have used it on trips whether I stay in a condo with a full kitchen to convention business hotel with nothing, and it works.
